Wine Notes

2014 Sonoma County

Heritage is a red blend which celebrates the perseverant and relentless spirit of our forefathers. This wine is a tribute to our proud heritage and commemorates the many bold journeys that shaped our great country. The 2013 is bold and rich with fruit-forward aromas of blackberry, boysenberry, and black cherry followed by violet, vanilla, and black licorice. Its flavors are intense with black fruit that meld together beautifully with the sweet oak and vanilla bean on the palate. With its silky texture, the tannins slowly unwind for a lingering finish.

Wine Pairing

Beef & Mushroom Lasagna

1 tbs. olive oil
1 medium onion, diced
2 c. diced cremini mushrooms
6 ea. cloves minced garlic
½ t. red pepper flakes
1 t. dried oregano
1 pound lean ground beef
32 ounces marinara sauce
16 ounces ricotta cheese
1/3 c. parmesan cheese
1 c. shredded mozzarella cheese
9 ea. no-boil lasagna noodles
Salt & pepper to taste

Preheat oven to 375˚F. Sauté mushrooms in oil over medium heat until they begin to soften (2-3 min.), then add garlic, red pepper, and oregano. Continue cooking for an additional 3-4 min. until mushrooms are soft. Add beef and continue cooking until no longer pink. Add marinara, then reduce to a simmer for 5 min. Add salt and pepper. While the sauce simmers, mix ricotta and parmesan. In a 9x13 baking dish, layer the sauce, noodles and cheese mixture starting and ending with the sauce, then sprinkle mozzarella on top. Cover loosely with foil and bake for 30 min. Uncover and bake an additional 10 min.
